Aged even further and as a result, has a more balanced bitter-sweetness, with a hint of the woody aromas of the cask. It is syrupy and fragrant, dense and full flavoured. Ideal for raw and cooked vegetables, omelettes, white meats, boiled fish and soft cheeses. Use sparingly as a little goes a long way.
